Yaman Style

What you need

Tomato Mix

  • ½ cup fresh coriander leaves densely packed
  • 1 hot chili pepper, small, seeded and finely chopped
  • 5 medium ripe tomatoes, peeled
  • 4 tbsp fresh lemon juice
  • ¼ cup virgin olive oil
  • Salt

Zaatar

  • 1/8 cup ground sumac berries
  • 1/8 sesame seeds
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tsp salt

Zhug

  • 1.5 cup finely chopped fresh coriander
  • 7 serrano peppers
  • 5 large garlic cloves
  • ½ tsp cumin
  • ½ tsp salt
  • 1.5 tsp water
  • 4 tbsp of olive oil

Other Bits

  • Malawach bread (roti is ok too)
  • Hard Boiled Eggs
  • Crumbed Feta

How it’s done

Tomato Mix

Slice the peeled tomatoes and place in a bowl.

Sprinkle the chopped coriander over the tomatoes.

Mix the chopped chili pepper with the lemon juice and 1 teaspoon of salt. Beat the olive oil into the chili-lemon juice mixture.

Pour over the tomatoes and coriander. Let rest 15 minutes before serving.

Zaatar

Roast sesame seeds in oven until browned

Mix with all other ingredients

Zhug

Wash the serrano peppers. Seed them and remove the white pith. Chop coarsely and place in a food processor.

Wash the cilantro well and pat dry. Remove stems and chop the leaves. Add to the food processor.

Peel the garlic and add to the pepper and cilantro mixture.

Add cumin and salt.

Blend adding water and olive oil as needed until desired consistency is reached.

To serve

Top bread with zhug, then zaatar, egg, tomato mix and finally feta
