Tomato Zucchini Loaf

What you need

  • 6 zucchinis, grated
  • 6 shortcut bacon rashers, chopped
  • 2 medium onions, chopped
  • 4 cloves garlic
  • 180g self raising flour
  • 6 eggs, beaten
  • 2 cups grated cheese
  • 1/3 cup rice bran oil
  • 1 tomato, diced
  • 2 tomatoes, sliced
  • Salt and pepper

How it’s done

Preheat oven to 200 degrees C

Lightly grease 2 9x19cm loaf tins and line with baking paper

Cook bacon in a pan until starting to crisp. Add onion and garlic.

Combine all ingredients, except the 2 sliced tomatoes, in a bowl and season to taste. Divide between tins and top with sliced tomatoes

Bake for 1 hour or until skewer comes out clean

Leave tins to cool, then turn out and slice
