Sweet Chilli Chicken with Cashews

What you need

  • 700g chicken breast, thinly sliced
  • ¼ cup fresh coriander, chopped
  • 2 birds-eyes chillies, chopped
  • 1 tbsp sesame oil
  • 1 clove garlic, crushed
  • 2 tbsp peanut oil
  • ½ cup rice vinegar
  • ¼ cup sweet chilli sauce
  • 1 tbsp lime juice
  • ¾ cup toasted cashews
  • 1 cup snow peas

How it’s done

Combine chicken, coriander, chilli, sesame oil and garlic in large bowl and cover in fridge overnight

Heat peanut oil

Stir fry chicken mixture in batches until browned

Return chicken to wok, add vinegar, sauce and juice

Stir fry until sauce boils

Add cashews

Just before serving, add snow peas
