Spanish Rice

What you need

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 garlic clove, minced
  • 2 cups of long-grain white rice
  • 2.5 cups chicken stock (or vegetable stock for vegetarian version)
  • 1 tbsp tomato paste
  • 200g diced tomatoes
  • Pinch of oregano

How it’s done

Cook the onion and garlic until it starts to soften

Add rice, cook until lightly browned

Add all remaining ingredients, bring to a very low simmer. Cover and cook for 15-20 min

Take off heat and let sit for 5 minutes. Fluff with a fork and serve
