Sour Cream Pastry

What you need

  • 300g chilled unsalted butter
  • 500g flour
  • Up to 1 cup sour cream

How it’s done

Mix butter and flour and a pinch of salt until it resembles large breadcrumbs.

Gradually add the sour cream, mixing until the pastry just comes together.

Shape into a disc, then wrap in plastic wrap then chill for at least 20 minutes.

Roll out to approx 4mm thickness.

Store in fridge or frozen in sheets separated by baking paper
