Passionfruit Slice

What you need

Base

  • 125g unsalted butter
  • 1 cup self raising flour
  • 1/2 cup sugar
  • 1 cup desiccated coconut
  • 1 tsp vanilla essence

Topping

  • 1 small can sweetened condensed milk
  • Juice of 2 lemons
  • 5 passionfruits

How it’s done

Base

Melt butter and pour over dry ingredients. Mix.

Press into tray.

Bake 10-15 minutes at 190°C.

Topping

Beat together condensed milk, lemon juice and passionfruit.

Pour over base and bake for 5 minutes.

Cool in fridge for 1 hour, and cut into slices. If sticky on top, top with coconut.
