Moroccan Beef Skewers with Cous Cous

What you need

Skewers

  • 450g Beef Mince
  • 2 cloves garlic, finely chopped
  • 1/2 brown onion, finely chopped
  • 2 tbsp parsley, chopped
  • 2 tsp ground cumin
  • 1 tsp allspice
  • 1 tsp chilli powder
  • 2 tbsp breadcrumbs
  • 1 egg, beaten

Cous Cous

  • 1 1/2 cups cous cous
  • 1 cup chicken stock
  • 1/2 cup water
  • 1 tsp salt
  • 1 tbsp parsley, chopped
  • 1 tbsp olive oil
  • 2/3 cup greek yoghurt
  • Juice and rind of one lemon
  • Salt and pepper

How it’s done

Skewers

In a large bowl combine all ingredients for skewers. Season with salt and pepper

Form 8 even sausage shapes about 10cm long and 3cm round with mixture and place on skewers

Cook on BBQ or in frying pan with olive oil

Cous Cous

Combine salt, water and stock in a saucepan and bring to the boil

Remove from heat, add cous cous and cover with lid. Let stand for 3 minutes

Fluff with fork and mix through olive oil and parsley, season with pepper

Mix yoghurt with lemon juice and lemon rind, and season with salt and pepper. Serve on top of cous cous.
