Cous Cous Salad

What you need

  • 1/2 cups cous cous
  • 1/2 cups chicken stock
  • 1 tbsp olive oil
  • 1 finely diced red capsicum
  • 1 finely diced carrot
  • 1 seeded and finely diced cucumber
  • 3 chopped spring onions
  • 2 tbsp pine nuts
  • 100g crumbled feta
  • 1/4 cup fresh mint and or basil finely chopped
  • 1 tbsp lemon juice

How it’s done

Bring stock to the boil in a medium saucepan.

Remove the pan from the heat and stir in the cous cous. Cover the pan tightly and stand for 5 mins, or until the liquid is absorbed and the cous cous is tender.

Fluff with a fork and mix in the olive oil, season with salt and pepper

Allow to cool, then mix in all other ingredients
