Basil Pesto

What you need

  • 3 garlic cloves, halved
  • 40g pine nuts or cashews (may be roasted under grill, or fresh)
  • 45g (1.5 cups) fresh basil leaves
  • 70g shredded parmesan
  • 4 tablespoons olive oil

How it’s done

Blitz garlic in food processor until well chopped

Add pine nuts, basil and parmesan and process until finely chopped. *

With the motor running, gradually add the oil in a thin steady stream until well combined.

If freezing, make double and do not add parmesan. Add after defrosting.
