Ants Crawling on Tree

What you need

  • 100g bean thread noodles
  • 400g pork mince
  • 3 tbsp soy sauce
  • 2 tbsp chilli sauce
  • 1 tbsp gin
  • Juice 1 lime
  • 2 clove garlic
  • 1 tsp corn flour
  • Sesame oil
  • 2 birds eye chillis, chopped
  • 2 ‘slices’ ginger, grated
  • 8 shitake mushrooms, chopped
  • 1/2 brown onion, sliced
  • 1 carrot, julienned
  • 1 zucchini, cored and julienned
  • 5 spring onions, chopped lengthwise and into 1 inch pieces
  • Head of lettuce
  • Coriander to serve

How it’s done

Mix soy sauce, chilli sauce, gin, lime, garlic and corn flour with pork. Set aside for 30min-1hr

Boil water, take off heat and soak noodles 10 minutes

Cook pork, remove from pan

Cook chillis, ginger and mushrooms in sesame oil until aromatic

Add carrot, onion and zucchini

Add pork and spring onions

Add ½ cup water, boil 2-3 min

Add noodles, stir until liquid absorbed
